Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick rounds. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out moisture.

Set Up Breading Station
In one bowl, combine the flour, salt, black pepper, and cayenne pepper. In the second bowl, pour the buttermilk. In the third bowl, place the cornmeal.

Bread the Tomatoes
Dredge each tomato slice in the flour mixture, then dip it in the buttermilk, and finally coat it with cornmeal. Set aside on a wire rack or plate.

Heat the Oil
In a large skillet, heat the oil over medium-high heat until hot but not smoking.

Fry the Tomatoes
Carefully add the breaded tomato slices to the hot oil, cooking in batches if necessary. Fry for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Serve
Top each fried green tomato with a dollop of peach pepper jam and crumble goat cheese over the top. Serve immediately.
