Prepare the crust
In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Form the crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in a preheated oven at 350°F (175°C) for 10 minutes, then let cool.

Make the filling
In a large mixing bowl, beat the cream cheese until smooth. Add the sugar, vanilla extract, and sour cream, and mix until well combined and creamy.

Add eggs
Add the eggs one at a time, mixing gently after each addition until just combined. Avoid overmixing.

Bake the cheesecake
Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven at 325°F (160°C) for 55-60 minutes, or until the center is set but still slightly jiggly.

Cool and chill
Once baked, turn off the oven and leave the cheesecake inside for an hour. Then remove it from the oven, let it cool to room temperature, and refrigerate for at least 4 hours or overnight before serving.
