Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. This helps to ensure they are crispy when cooked.

Make the Breading Mixture
In a large mixing bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well until all dry ingredients are evenly combined.

Coat the Calamari
Dip each calamari ring into the buttermilk, allowing any excess to drip off, then dredge it in the breading mixture, pressing lightly to ensure an even coat.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, being cautious not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Use a slotted spoon to remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately.

Combine Ingredients
In a mixing bowl, combine the mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt. Stir well until the mixture is smooth and well incorporated.

Adjust Seasoning
Taste the aioli and adjust the salt or sriracha for heat according to your preference. Mix again to combine.

Transfer the spicy aioli to a serving bowl and serve alongside the crispy calamari.
