Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C).
- 2
Making the Cake Batter
- 3
Melt Chocolate and Butter
In a double boiler or a microwave-safe bowl, melt the unsweetened chocolate and unsalted butter together until smooth. Allow to cool slightly.
- 4
Mix Sugar and Eggs
In a mixing bowl, whisk together the granulated sugar, large eggs, egg yolks, and vanilla extract until well combined and slightly thickened.
- 5
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously until fully combined.
- 6
Add Flour and Salt
Sift the all-purpose flour and salt into the chocolate mixture, gently folding until just combined. Do not overmix.
Baking the Cakes
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- 8
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will be soft.
- 9
Cool Slightly
Remove the ramekins from the oven and let them cool for 1 minute.
- 10
Invert and Serve
Carefully run a knife around the edges of each ramekin to loosen the cake. Invert onto individual plates and serve immediately with a scoop of vanilla ice cream.
