Garlic Smashed Potatoes

    Boil the Potatoes

    Place the baby redskin potatoes in a large pot and cover with water. Bring to a boil over medium-high heat. Add a teaspoon of salt and cook until the potatoes are fork-tender, about 15-20 minutes.

    Prepare the Garlic

    While the potatoes are boiling, peel and smash the garlic cloves. In a small saucepan, melt the butter over low heat and add the smashed garlic. Cook gently until fragrant, about 2-3 minutes, being careful not to burn the garlic.

    Drain and Smash

    Once the potatoes are tender, drain them in a colander. Return them to the pot and add the garlic butter mixture along with the heavy cream, remaining salt, and black pepper. Using a potato masher, gently smash the potatoes to your desired consistency, leaving some chunks for texture.

    Garnish and Serve

    Transfer the smashed potatoes to a serving bowl. Sprinkle with chopped chives and serve warm.
