Prepare the Mango Pico de Gallo

In a bowl, combine diced mango, red onion, chopped cilantro, lime juice, and salt. Mix well and set aside.

Make the Old Bay Remoulade

In a separate bowl, mix mayonnaise, Old Bay seasoning, lemon juice, Dijon mustard, and hot sauce. Stir until smooth and set aside.

Blacken the Shrimp

Toss the jumbo shrimp in blackening seasoning. Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for 2-3 minutes on each side until blackened and cooked through.

Assemble the Tacos

Warm the tortillas in a pan or microwave. Lay down shredded lettuce, add blackened shrimp, top with mango pico de gallo, sprinkle Monterey Jack cheese, and drizzle with Old Bay remoulade.

Serve

Serve the tacos immediately with extra lime wedges on the side.
