For the Blackened Salmon

Prepare the Spice Mix
In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt.

Season the Salmon
Rub the spice mix generously over the salmon fillets.

Preheat the Pan
Heat olive oil in a large skillet over medium-high heat until shimmering.

Cook the Salmon
Add the salmon fillets to the skillet and cook for about 4-5 minutes on each side, or until the fish is cooked through and blackened.

Prepare the Glaze
In a small saucepan, combine cherry jam, pomegranate juice, grated ginger, and wasabi paste. Heat over low heat until the jam is melted and the mixture is well combined.

Glaze the Salmon
Brush the glaze over the blackened salmon fillets during the last minute of cooking.

Serve the blackened salmon with Southwestern quinoa salad on the side.
