Cook the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the mixed vegetables, season with salt and pepper, and sauté for about 5-7 minutes until they are tender but still crisp. Remove from the pan and set aside.

Make the Shrimp Scampi Topping
In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the shrimp and cook for about 3-4 minutes, or until shrimp turn pink. Stir in lemon juice and lump crab meat, and cook for an additional 2 minutes. Season with salt and pepper to taste.

Prepare the Lobster Tails
Preheat the oven to 375°F (190°C). Using kitchen scissors, cut the top of the lobster tails down the center to expose the meat. Place the tails on a baking tray, season with salt and pepper, and top with the shrimp scampi mixture. Bake in the preheated oven for about 15-20 minutes, or until the lobster meat is opaque and cooked through.

Serve
On each plate, serve a portion of the red rice, topped with the sautéed vegetables. Place a baked lobster tail on top and garnish with any remaining shrimp scampi topping. Enjoy your Twin Lobster Tails!
