Tomato Jam

Prepare and cook jam

Heat 1 teaspoon olive oil in a medium nonstick skillet over medium heat. Add 1/4 cup finely chopped red onion and cook, stirring, until softened, about 3 minutes. Add 1 teaspoon minced garlic and cook 30 seconds until fragrant. Add 2 cups diced ripe tomatoes, 3 tablespoons granulated sugar, 2 tablespoons apple cider vinegar, 1/2 teaspoon smoked paprika, 1/4 teaspoon red pepper flakes, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Stir to combine and bring to a simmer.

Reduce heat to low and simmer gently, stirring occasionally, until mixture thickens and becomes jammy, about 20–30 minutes. If it gets too dry, add a tablespoon of water. Taste and adjust seasoning for sweetness or acidity. Remove from heat and let cool slightly — the jam will thicken more as it cools. Keep warm or refrigerate until assembly; rewarm gently before using if chilled.

Season and preheat

Season both sides of the 2 Beyond Meat patties with 1 teaspoon salt and 1/2 teaspoon black pepper. Preheat a grill pan or skillet over medium-high heat and brush with 1 tablespoon olive oil.

Grill patties

When the pan is hot, place patties on it and cook without moving for 3–4 minutes to develop a sear. Flip and cook another 3–4 minutes. In the last 1–2 minutes of cooking, top each patty with 2 slices of smoked plant-based cheddar, cover the pan briefly with a lid to help cheese melt, and cook until cheese is softened and patties are cooked through (internal texture should be hot and firm). Remove from heat and let rest 1–2 minutes.

Toast buns

Butter the cut faces of the 2 gluten-free brioche-style buns with about 2 teaspoons unsalted or vegan butter. Place them cut-side down in a clean skillet over medium heat and toast until golden, about 1–2 minutes. Remove and set aside.

Assemble burgers

Place a butterleaf lettuce leaf on each bottom bun to help protect the bread from moisture. Put a sliced tomato round and a few rings of thinly sliced red onion on the lettuce. Place the warm Beyond patty with melted smoked cheddar on top. Spoon about 2 tablespoons of warm tomato jam over the cheese on each burger (adjust to taste). Top with the bun crown and serve immediately.
