    Prepare the Mussels

    Rinse the mussels under cold water to remove any sand or debris. Remove any beards or barnacles attached to the shells.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.

    Add Wine and Tomatoes

    Pour in the white wine and add the can of diced tomatoes (with juice). Bring the mixture to a simmer.

    Cook the Mussels

    Add the prepared mussels to the pot, cover with a lid, and let steam for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

    Season and Finish

    Stir in chopped parsley and season with salt and black pepper to taste. Mix well to combine.

    Grill the Sourdough

    While the mussels are cooking, grill the sourdough slices until golden brown and crispy on both sides.
