Prepare the Meat Mixture
In a large mixing bowl, combine the ground pork, minced garlic, chopped sage, chopped thyme, salt, black pepper, red pepper flakes, and brown sugar. Mix thoroughly until all ingredients are well incorporated.
Form the Patties
Divide the meat mixture into equal portions (about 4-6 depending on desired patty size). Shape each portion into a round patty, pressing them firmly to hold their shape.
Cook the Patties
Heat the olive oil in a large skillet over medium heat. Once hot, add the pork patties to the skillet. Cook for about 4-5 minutes on each side, or until the internal temperature reaches 160°F (71°C) and the patties are golden brown.
Serve
Once cooked, remove the patties from the skillet and let them rest for a couple of minutes before serving. These can be enjoyed on their own or used in sandwiches, breakfast plates, or alongside your favorite sides.
