Preparation and Cooking

    Prepare the Hanger Steak

    Remove the hanger steak from the refrigerator and let it come to room temperature for about 30 minutes. This ensures even cooking.

    Season the Steak

    Rub the hanger steak with olive oil, then season generously with salt and black pepper on both sides.

    Prepare the Potatoes

    Peel the large potatoes and cut them into fries, about 1/4 inch thick. Soak them in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil for Frying

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

    Fry the Potatoes

    Drain the soaked fries and pat them dry with paper towels. Carefully add them in batches to the hot oil and fry for about 4-5 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt.

    Grill the Steak

    While the fries are frying, place the seasoned hanger steak on a preheated grill over high heat. Grill for about 4-5 minutes on each side for medium-rare, depending on thickness.

    Rest the Steak

    Once grilled to your liking, remove the steak from the grill and let it rest for at least 5 minutes before slicing.

    Serve

    Slice the steak against the grain and serve it alongside the hot fries. Optionally, drizzle with chimichurri sauce.
