    Prepare the Potatoes

    Wash and cut the River Roast Potatoes into quarters. Boil them in salted water for about 10 minutes until tender, then drain and set aside.

    Cook the Steak

    Season the hanger steak generously with salt and pepper. Preheat a skillet over medium-high heat and add a tablespoon of oil. Sear the steak for about 4-5 minutes on each side for medium-rare. Remove from the skillet and let it rest for 5 minutes before slicing.

    Fry the Eggs

    In the same skillet, crack the two eggs and cook them to your preference (sunny-side up, over-easy, etc.), about 2-3 minutes for sunny-side up.

    Prepare the Arugula

    While the steak is resting, rinse the arugula under cold water and pat it dry. Set aside.

    Serve the Dish

    On a plate, arrange the sliced hanger steak, fried eggs, boiled potatoes, and a handful of arugula. Drizzle chimichurri over the steak and serve immediately.
