    Prepare the Vegetables

    Start by washing and chopping the bell peppers, onion, and mushrooms into bite-sized pieces. Peel the sweet potato and cut it into small cubes.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent. Then, add the bell peppers and mushrooms, cooking for an additional 5 minutes until they begin to soften.

    Cook the Sweet Potato

    Add the diced sweet potato to the skillet. Season with salt and black pepper. Stir well to combine and cover the skillet. Allow to cook for about 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.

    Fry the Eggs

    While the vegetables are cooking, in a separate pan, fry the eggs sunny side up or to your preference. Season with salt and pepper.

    Add Cheese and Herbs

    Once the sweet potatoes are tender, crumble the herbed goat cheese over the vegetable mixture and stir to combine. Allow it to melt slightly.

    Divide the vegetable mixture onto plates and top each portion with a fried egg. Garnish with fresh herbs if desired. Serve warm.
