Pork Belly Preparation

Prepare the Pork Belly
Cut the pork belly into bite-sized cubes. Pat dry with paper towels.

Season the Pork
In a bowl, mix salt, black pepper, and smoked paprika. Rub this seasoning mixture all over the pork belly cubes.

Sear the Pork
In a large skillet, heat olive oil over medium-high heat. Add the pork belly cubes in batches, searing on all sides until crispy and browned, about 5-7 minutes per batch. Remove and set aside.
Jalapeño Jam Preparation

Cook the Jam
In a saucepan, combine diced jalapeños, sugar, and apple cider vinegar. Bring to a boil over medium heat, stirring frequently.

Add Pectin
Once boiling, add pectin and continue to boil for another 1-2 minutes until the mixture thickens. Remove from heat and let it cool to room temperature.
Pickling Fresno Chiles

Prepare the Pickling Liquid
In a small saucepan, combine white vinegar, water, salt, and sugar. Bring to a simmer over medium heat until salt and sugar dissolve.

Pickle the Chiles
Place sliced Fresno chiles in a jar and pour the hot pickling liquid over them. Allow to cool and then refrigerate for at least 30 minutes.
Assembly

Garnish the Pork Belly Bites
On a serving platter, arrange the seared pork belly cubes. Top each piece with a spoonful of jalapeño jam and a few slices of pickled Fresno chiles. Finish with a sprinkle of chopped cilantro.
