Grilled Octopus Directions

    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for about 40-45 minutes until tender. Remove the octopus and let it cool.

    Marinate the Octopus

    In a bowl, mix olive oil, lemon juice, salt, black pepper, and paprika. Once the octopus has cooled, cut it into manageable pieces and marinate it in the mixture for at least 30 minutes.

    Prepare the Vegetables

    While the octopus is marinating, slice the cucumbers into thin rounds and chop the scallions. Set aside.

    Grill the Octopus

    Preheat the grill to high heat. Grill the marinated octopus pieces for about 3-4 minutes on each side until charred and slightly crispy.

    Char the Scallions

    During the last few minutes of grilling the octopus, add the scallions to the grill and char them for about 2 minutes, turning occasionally.

    Plate the Dish

    On a serving platter, arrange the grilled octopus, charred scallions, and cucumber slices. Garnish with piquillo peppers and fresh mint leaves.
