Soak the Potatoes
Place the cut potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels. Removing excess moisture is crucial for achieving crispy fries.

Fry the Potatoes
Carefully add a handful of dried potato strips to the hot oil, being careful not to overcrowd the pot. Fry them for about 5-6 minutes, or until they turn golden brown and crispy.

Drain and Season
Once cooked, remove the fries with a slotted spoon and place them on a plate lined with paper towels to absorb excess oil. While they're still hot, sprinkle with sea salt to taste.

Serve the crispy French fries hot with garlic aioli on the side for dipping.
