    Prepare the Tortilla Chips

    Heat the olive oil in a large skillet over medium heat. Once hot, add the tortilla chips and fry until golden and crispy, about 3-5 minutes. Remove from heat and place on a paper towel to drain excess oil. Sprinkle with salt and pepper.

    Make the Chilaquiles Base

    In the same skillet, add the salsa verde and bring it to a simmer. Add the crispy tortilla chips to the skillet and gently toss to coat the chips with the salsa. Allow to cook for about 2-3 minutes until the chips start to absorb some of the salsa.

    Add Chicken and Cheese

    Add the shredded smoked chicken and half of the cheddar cheese to the skillet. Gently mix to combine and allow the cheese to melt slightly, about 1-2 minutes.

    Fry the Eggs

    In a separate skillet, heat a little olive oil over medium-high heat. Crack the eggs into the skillet and fry to your desired doneness (sunny-side-up, over-easy, etc.), about 3-4 minutes. Season with salt and pepper.

    Assemble the Chilaquiles

    Transfer the chilaquiles mixture onto a serving platter. Top with the fried eggs and sprinkle the remaining cheddar cheese on top. Add pico de gallo and drizzle with cilantro crema.

    Serve

    Serve immediately while hot, garnished with additional cilantro if desired.
