Preheat Oven
Preheat your oven to 400°F (200°C).

Prepare Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow outer leaves.

Season Brussels Sprouts
In a mixing bowl, combine the Brussels sprouts with olive oil, salt, and black pepper. Toss well to coat.

Arrange for Roasting
Spread the Brussels sprouts on a baking sheet in a single layer.

Roast Brussels Sprouts
Roast in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through cooking.

Prepare Vinaigrette Base
Reserve 2 tablespoons of the bacon fat in the skillet and discard the rest.

Make Vinaigrette
Add the apple cider vinegar, Dijon mustard, honey, and olive oil to the skillet. Whisk to combine and heat until slightly warmed.

Combine Bacon with Vinaigrette
Crumble the cooked bacon and add it to the vinaigrette. Stir to combine.

Finely chop the fresh parsley and thyme.

Add the chopped herbs to the bacon vinaigrette and stir to combine.
