Octopus

Method

Preparation of Octopus

  1. 1

    Cleaning the Octopus

Rinse the whole octopus under cold water to remove any sand or impurities. Remove the beak and eyes, if still intact.

  2. 2

    Boiling the Octopus

In a large pot, bring salted water to a boil. Add the octopus and simmer for about 45 minutes or until tender. Remove and let cool.

  3. 3

    Grilling the Octopus

Once cooled, cut the tentacles from the body. Brush with olive oil, season with salt and pepper, and grill over high heat for about 3-4 minutes on each side until charred.

Preparation of Puttanesca Sauce

  1. 4

    Cooking the Sauce

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Then, add the crushed tomatoes, olives, capers, and red pepper flakes. Simmer for 15 minutes.

  2. 5

    Finishing Touches

Stir in the chopped parsley and basil just before serving. Adjust seasoning with salt and pepper if necessary.

Serving

  1. 6

    Plating

Serve the grilled octopus topped with the Puttanesca sauce, garnished with additional parsley and basil if desired.
