Method
Preparing the Pork Chop

Season the Pork
Pat the Berkshire pork chop dry with paper towels. In a small bowl, mix 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of garlic powder. Rub the spice mixture all over the pork chop. Drizzle 2 tbsp of olive oil over the chop and let it marinate for at least 30 minutes at room temperature.

Preheat the Grill
Prepare your wood-fired grill by lighting the wood and allowing the fire to reach a high temperature. Aim for a temperature of about 450°F (232°C) for optimal grilling.

Preparing the Charred Broccolini

Season the Broccolini
In a mixing bowl, combine the broccolini with 1 tbsp of olive oil, 1 tsp of salt, and 1 tsp of red pepper flakes. Toss until the broccolini is evenly coated.

Preparing the Gremolata

Mix the Gremolata
In a small bowl, combine 1 cup of chopped fresh parsley, 2 minced garlic cloves, and 1 tbsp of lemon zest. Drizzle with 1 tbsp of olive oil and season with salt to taste. Stir well to combine.
Serving

Plate and Serve
Slice the rested pork chop and plate it alongside the charred broccolini. Drizzle the gremolata over the pork chop and serve immediately.
