Prepare the Marinade
In a bowl, combine coconut milk, fish sauce, brown sugar, and lime juice. Whisk until well mixed.

Marinate the Fish
Make slashes on both sides of the red snapper. Pour the marinade over the fish, ensuring it gets into the slashes. Cover and refrigerate for at least 30 minutes.

Prepare the Ingredients
Chop black garlic, green onions, and beat the eggs in a bowl.

Cook the Fried Rice
Heat vegetable oil in a large skillet over medium heat. Add black garlic and sauté until fragrant. Push the garlic to the side and scramble the eggs until cooked. Add the cooked rice and soy sauce, mixing well. Stir in the chopped green onions and cook for another 2-3 minutes.

Prepare the Relish
Finely chop the grilled pineapple, serrano peppers, and red onion. In a bowl, mix the chopped ingredients with lime juice and chopped cilantro.
