Thai Barbecued Red Snapper

    Prepare the Marinade

    In a bowl, combine coconut milk, fish sauce, brown sugar, and lime juice. Whisk until well mixed.

    Marinate the Fish

    Make slashes on both sides of the red snapper. Pour the marinade over the fish, ensuring it gets into the slashes. Cover and refrigerate for at least 30 minutes.

    Grill the Fish

    Preheat your grill to medium-high heat. Grill the fish for about 6-7 minutes on each side, or until the flesh flakes easily with a fork. Garnish with fresh cilantro before serving.

Black Garlic Fried Rice

    Prepare the Ingredients

    Chop black garlic, green onions, and beat the eggs in a bowl.

    Cook the Fried Rice

    Heat vegetable oil in a large skillet over medium heat. Add black garlic and sauté until fragrant. Push the garlic to the side and scramble the eggs until cooked. Add the cooked rice and soy sauce, mixing well. Stir in the chopped green onions and cook for another 2-3 minutes.

Bok Choy

    Prepare the Bok Choy

    Rinse and chop the bok choy into bite-sized pieces. Mince the garlic.

    Sauté the Bok Choy

    In a pan, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant. Add bok choy and salt, cooking until wilted, about 3-4 minutes.

Grilled Pineapple & Serrano Pepper Relish

    Grill the Pineapple

    Preheat the grill to medium heat. Cut the pineapple into rings and grill for about 3-4 minutes on each side until caramelized.

    Finely chop the grilled pineapple, serrano peppers, and red onion. In a bowl, mix the chopped ingredients with lime juice and chopped cilantro.
