Preparation of Swordfish

    Season the Swordfish

    Rub the swordfish steaks with olive oil, salt, and black pepper on both sides. Let them marinate for 15 minutes.

Preparation of Seasoned Breadcrumbs

    Mix the Breadcrumbs

    In a bowl, combine breadcrumbs, grated Parmesan cheese, dried oregano, garlic powder, and paprika. Mix well and set aside.

Cooking the Swordfish

    Coat and Cook

    Preheat the grill or a skillet over medium-high heat. Coat the marinated swordfish steaks in the seasoned breadcrumbs. Grill or cook for about 5-6 minutes on each side, or until the fish is cooked through and golden brown.

Preparing the Toppings

    Prepare Toppings

    In a separate pan, lightly toast the pine nuts over low heat until golden. Blanch the broccolini in boiling water for 2 minutes, then char on a grill or in a pan until tender and slightly charred.

Making the Lemon & Herb Sauce

    Mix the Sauce

    In a bowl, whisk together fresh lemon juice, chopped parsley, chopped basil, minced garlic, salt, and black pepper. Adjust seasoning to taste.

Assembly

    Plate the Dish

    On each plate, place a swordfish steak. Top with golden raisins, toasted pine nuts, and marinated olives. Serve alongside charred broccolini and drizzle with lemon & herb sauce.
