Cake Preparation
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- 2
Cream Butter and Sugar
In a large mixing bowl, cream together 1 cup of unsalted butter and 1.5 cups of granulated sugar until light and fluffy.
- 3
Add Eggs and Vanilla
Add 3 large eggs one at a time, mixing well after each addition. Stir in 1 tablespoon of vanilla extract.
- 4
Combine Dry Ingredients
In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 0.5 teaspoon of salt.
- 5
Mix Wet and Dry Ingredients
Gradually add the dry mixture to the butter mixture, mixing until just combined. Do not overmix.
Caramelized Fruit Preparation
- 6
Prepare the Fruit
Chop the seasonal fruit into bite-sized pieces if necessary. Set aside.
- 7
Caramelize the Fruit
In a skillet over medium heat, melt 2 tablespoons of unsalted butter. Add 4 cups of seasonal fruit, 0.5 cups of brown sugar, and 1 teaspoon of ground cinnamon. Cook, stirring frequently, until the fruit is tender and caramelized, about 5-7 minutes.
- 8
Arrange in Cake Pan
Pour the caramelized fruit mixture into the prepared cake pan, spreading it evenly across the bottom.
Baking the Cake
- 9
Add Cake Batter
Pour the cake batter over the caramelized fruit in the cake pan, smoothing the top with a spatula.
- 10
Bake the Cake
Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- 11
Cool the Cake
Once baked, remove from the oven and let it cool in the pan for 10 minutes before inverting onto a serving plate.
Vanilla Sauce Preparation
- 12
Prepare the Sauce
In a saucepan, combine 1 cup of heavy cream, 0.5 cups of granulated sugar, and 1 tablespoon of vanilla extract.
- 13
Thicken the Sauce
In a small bowl, mix 1 teaspoon of cornstarch with 2 tablespoons of water to create a slurry. Add to the saucepan and cook over medium heat until the sauce thickens, about 5 minutes.
