Method
Pretzel Dough Preparation

Activate Yeast
In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Prepare Dough
In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and oil. Mix until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Shape Pretzel Bites
Once risen, punch down the dough and divide it into small pieces. Roll each piece into a ball.
Boiling and Baking

Prepare Water Bath
In a large pot, bring 10 cups of water to a boil. Add the baking soda slowly (be careful, it will bubble).

Boil Pretzel Bites
Drop the pretzel balls into the boiling water, a few at a time, for about 30 seconds. Remove with a slotted spoon.

Bake Pretzel Bites
Place the boiled pretzel bites on a greased baking sheet. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.
Seasoning and Serving

Prepare Seasoning
In a small bowl, mix Parmesan cheese, dried chili flakes, garlic powder, onion powder, and salt.

Season Pretzel Bites
Once the pretzel bites are baked, immediately sprinkle them with the Green Chili Parmesan seasoning.

Make Beer Mustard
In a bowl, combine yellow mustard, beer, honey, apple cider vinegar, and salt. Mix well.

Serve the pretzel bites warm with Prospector's Pick Beer Mustard on the side.
