Soak Hog Casings
Soak the natural hog casings in cold water for at least 30 minutes before using. This will make them pliable and ready for stuffing.

Prepare Meat Mixture
In a large mixing bowl, combine ground pork and pork fatback. Mix well to ensure an even blend.

Add Spices
To the meat mixture, add salt, black pepper, garlic powder, onion powder, paprika, red pepper flakes, sage, and thyme. Mix thoroughly to ensure all spices are evenly distributed.

Add Ice Water
Add the ice water to the seasoned meat mixture. This will help to keep the mixture moist and improve the texture. Mix until well combined.
Stuffing and Cooking

Prepare Sausage Stuffer
Set up your sausage stuffer according to the manufacturer's instructions. Rinse the hog casings again and slide one end onto the stuffing tube.
