Panna Cotta Base

    Prepare Gelatin

    In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes until it blooms.

    Heat Cream and Sugar

    In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir occasionally until the sugar has dissolved and the mixture is heated but not boiling.

    Add Gelatin

    Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved. Then add the vanilla extract and mix well.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Allow to cool to room temperature before covering with plastic wrap.

    Chill

    Refrigerate the panna cotta for at least 4 hours or until set.

Berry Coulis

    Combine Ingredients

    In a saucepan, combine mixed berries, granulated sugar, and lemon juice.

    Cook the Coulis

    Cook over medium heat, stirring occasionally, until the berries break down and the mixture becomes syrupy, about 10 minutes.

    Blend and Strain

    Remove from heat and blend the mixture until smooth. Strain through a fine-mesh sieve to remove seeds, if desired.

    Cool

    Let the coulis cool to room temperature before using.
