Method

Prepare the Dough

    Mix the Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, instant yeast, and salt. Stir well to combine.

    Add Wet Ingredients

    Make a well in the center of the dry ingredients and add the warm water and olive oil. Mix until a shaggy dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.

Make the Sauce

    Sauté Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Add the canned whole tomatoes, salt, black pepper, and dried oregano to the saucepan. Crush the tomatoes with a spoon and stir well.

    Simmer

    Reduce heat and let the sauce simmer for about 20-30 minutes, stirring occasionally until thickened. Remove from heat and let cool.

Assemble the Pizza

    Preheat Oven

    Preheat your oven to 250°C (482°F) or as high as it can go, preferably with a pizza stone inside.

    Shape the Dough

    Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into two equal portions and shape each into a round pizza base.

    Add Sauce and Toppings

    Spread a thin layer of tomato sauce over each pizza base. Top with slices of fresh mozzarella and scatter fresh basil leaves on top.

    Drizzle with Olive Oil

    Drizzle 1 tablespoon of Castello Di Ama olive oil over each pizza.

    Bake the Pizza

    Carefully transfer the pizza onto the preheated pizza stone or a baking sheet. Bake for about 10-12 minutes, or until the crust is golden and the cheese is bubbly.

Serve

    Remove the pizza from the oven, allow to cool for a minute, slice, and serve hot.
