Lemonade Preparation

    Juicing the Lemons

    Cut the lemons in half and juice them until you have about 1 cup of fresh lemon juice. Strain to remove seeds and pulp if desired.

    Making the Simple Syrup

    In a small saucepan, combine 1 cup of water with 1 cup of granulated sugar. Heat over medium heat, stirring until the sugar is fully dissolved. Remove from heat and let cool.

    Combining the Lemonade

    In a pitcher, combine the lemon juice, 4 cups of water, and the cooled simple syrup. Stir well and refrigerate until chilled.

    For the strawberry puree, blend 1 cup of fresh strawberries until smooth. Strain if desired. For raspberry puree, blend 1 cup of fresh raspberries until smooth. Strain if desired.

Mimosa Assembly

    Mixing the Mimosa

    To serve, fill a champagne flute halfway with the lemonade, then top with sparkling wine. For a flavored version, add 1-2 tablespoons of the fruit puree of your choice (strawberry or raspberry) before adding the sparkling wine.
