Sable Dough Preparation

    Make the Dough

    In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing until fully combined.

    Combine Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour and salt. Gradually add this to the butter mixture, stirring until a soft dough forms.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Vanilla Pastry Cream Preparation

    Heat the Milk

    In a medium saucepan, heat the whole milk and vanilla bean (including the seeds) over medium heat until it starts to simmer. Remove from heat and let it steep for 15 minutes.

    Mix Egg Yolks and Sugar

    In a bowl, whisk together the egg yolks, granulated sugar, and cornstarch until smooth.

    Combine Mixtures

    Slowly pour the warm milk into the egg mixture while whisking constantly to temper the eggs. Return this mixture to the saucepan.

    Thicken the Cream

    Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble. Remove from heat and stir in the unsalted butter.

    Chill the Cream

    Transfer the pastry cream to a bowl, cover with plastic wrap (pressing it directly against the surface), and refrigerate until fully cooled.

Raspberry Marmalade Preparation

    Cook the Raspberries

    In a medium saucepan, combine the fresh raspberries, granulated sugar, and lemon juice. Cook over medium heat, stirring gently, until the raspberries break down and the mixture thickens (about 10-15 minutes).

    Cool the Marmalade

    Remove from heat and let the marmalade cool completely.

Assembly

    Preheat and Prepare the Pan

    Preheat your oven to 350°F (175°C). Grease a tart pan with butter.

    Layer the Ingredients

    On a lightly floured surface, roll out half of the sable dough to fit the bottom of the tart pan. Spread a layer of raspberry marmalade over the dough, followed by a layer of vanilla pastry cream.

    Top with Dough

    Roll out the remaining sable dough and cover the top of the tart. Press the edges to seal and create a decorative pattern with a fork or knife.

    Bake the Gâteau Basque

    Bake in the preheated oven for 30-35 minutes, or until golden brown. Let it cool completely before serving.
