Prepare the Vegetables
Rinse the broccolini under cold water and trim any tough ends. Slice the Vidalia onion into thin rings. If using jarred piquillo peppers, drain them and slice them into strips.
Grilling

Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).

Season the Vegetables
In a large mixing bowl, combine the broccolini and onion rings. Drizzle with olive oil, then sprinkle with salt, black pepper, and garlic powder. Toss everything together until the vegetables are evenly coated.

Add Piquillo Peppers
During the last 2 minutes of grilling, add the sliced piquillo peppers to the grill. This will warm them through without overcooking.
Serving

Plate the Dish
Remove the grilled broccolini and onion from the grill and transfer them to a serving platter. Top with the grilled piquillo peppers.
