Base Ingredients

Method

Base Preparation

  1. 1

    Heat Milk and Cream

In a saucepan, combine whole milk and heavy cream. Heat over medium heat until steaming but not boiling.

  2. 2

    Whisk Egg Yolks and Sugar

In a mixing bowl, whisk together egg yolks and granulated sugar until the mixture is pale and slightly thickened.

  3. 3

    Combine Mixtures

Slowly pour the hot milk mixture into the egg yolk mixture while continuously whisking to temper the eggs.

  4. 4

    Cook the Custard

Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens and coats the back of a spoon (about 5-7 minutes).

  5. 5

    Add Vanilla

Remove from heat and stir in vanilla extract. Let the mixture cool to room temperature, then refrigerate until chilled.

Flavoring and Churning

  1. 6

    Prepare Flavor Variations

Choose your desired flavor: for chocolate, stir in cocoa powder; for strawberry, blend fresh strawberries and fold into the base; for pistachio, add chopped pistachios; for coffee, stir in brewed coffee.

  2. 7

    Churn the Gelato

Pour the prepared mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  3. 8

    Freeze the Gelato

Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
