Fried Calamari

Prepare the Calamari
Begin by cleaning and slicing the calamari into rings. Pat them dry with paper towels to remove excess moisture.

Make the Coating
In a mixing bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to create a uniform dry mixture.

Coat the Calamari
Dip each calamari ring into the egg mixture, allowing excess to drip off, then dredge in the flour mixture until evenly coated. Set aside on a plate.

Heat the Oil
In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Fry the Calamari
Carefully add the coated calamari to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes
Stir in the crushed tomatoes, oregano, salt, black pepper, and sugar. Bring the sauce to a simmer.

Let the sauce simmer for about 15-20 minutes, stirring occasionally, until thickened. Stir in the fresh basil just before serving.
