Preparation

Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for roasting the artichokes.

Prep the Vegetables
Drain and rinse the artichoke hearts. Chop the red onion into thin slices and set aside.

Sauté Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes. Remove from heat and set aside.

Combine Ingredients
In a bowl, combine the sautéed spinach, artichoke hearts, sliced red onion, and cerignola olives. Drizzle with 1 tablespoon of olive oil, and add salt and black pepper to taste. Mix well.

Spread the Mixture
Spread the combined mixture evenly in a baking dish.

Add Cheese
Sprinkle the mozzarella cheese evenly over the mixture, followed by the pecorino cheese.
Roasting

Roast in the Oven
Place the baking dish in the preheated oven and roast for 25-30 minutes, or until the cheese is melted and bubbly and the top is lightly golden.
