Preparation of Salad Ingredients

Prepare the Fennel
Trim the fennel bulb, removing the stalks and fronds. Using a mandoline or a sharp knife, shave the fennel into thin slices. Place the slices in a large bowl.

Prepare the Radicchio
Cut the radicchio in half, remove the core, and slice it into thin strips. Add the radicchio to the bowl with the fennel.

Slice the Grapefruit and Orange
Using a sharp knife, slice off the top and bottom of the grapefruit and orange. Stand the fruit on its end and carefully slice away the peel and pith. Cut the segments out of the grapefruit and orange, discarding any seeds. Add the segments to the bowl.

Add the Olives
Drain the tangerine spiced olives and add them to the salad bowl.
Roasting the Garlic

Roast the Garlic
Wrap the garlic in foil and place it in the oven. Roast for about 30-35 minutes, or until the cloves are soft and golden. Let it cool slightly, then squeeze the roasted garlic cloves out of their skins and set aside.
Making the Dressing

Combine Ingredients
In a small bowl, combine the roasted garlic, Calabrian chili, lemon juice, honey, salt, and black pepper. Whisk together until smooth.
Assembling the Salad

Mix the Salad
Pour the dressing over the salad mixture and toss gently to combine. Ensure all the ingredients are well coated with the dressing.

Serve
Transfer the salad to a serving platter or individual plates. Enjoy fresh!
