Eggs in Purgatorio

    Prepare the Roasted Tomatoes

    Preheat your oven to 200°C (400°F). In a baking dish, toss the cherry tomatoes with olive oil, salt, and black pepper. Spread them out evenly and roast in the oven for 20-25 minutes or until they are blistered and soft.

    Make the Egg Mixture

    In a skillet over medium heat, add the roasted tomatoes along with Calabrese chili flakes. Stir to combine and cook for another 2-3 minutes to allow the flavors to meld.

    Poach the Eggs

    Create small wells in the tomato mixture and crack the cage-free eggs into each well. Cover the skillet with a lid and let the eggs poach for about 5-7 minutes or until the whites are set but the yolks are still runny.

    Add the Cheeses

    Once the eggs are poached, sprinkle the mozzarella and Valserena Parmigiano over the top. Cover the skillet again for 2-3 minutes until the cheese is melted.

    Garnish

    Remove from heat and sprinkle fresh basil leaves on top. Season with additional salt and black pepper to taste.

    Prepare the Potatoes

    While the tomatoes are roasting, wash and cut the small potatoes into halves or quarters depending on their size.

    Season the Potatoes

    In a bowl, combine the potatoes with olive oil, minced garlic cloves, chopped fresh rosemary, salt, and black pepper. Toss to coat evenly.

    Roast the Potatoes

    Spread the seasoned potatoes on a baking sheet and roast in the oven at 200°C (400°F) for about 25-30 minutes or until they are golden and crispy, turning halfway through.

Toasted Focaccia

    Toast the Bread

    While the potatoes are roasting, heat a skillet over medium heat. Brush the focaccia slices with olive oil and sprinkle with salt. Toast the slices in the skillet for about 3-4 minutes on each side until golden brown.
