Method

Slider Patties

    Prepare the Slider Patties

    In a mixing bowl, combine the Wagyu ground beef, salt, and black pepper. Mix until just combined and form into small patties, about 2 inches in diameter.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    Add Cheese

    During the last minute of cooking the patties, place a slice of white cheddar on each patty and cover to melt the cheese.

Pueblo Green Chili Remoulade

    Make the Remoulade

    In a bowl, mix together the mayonnaise, diced Pueblo green chilies, garlic powder, lemon juice, and salt to taste. Stir until well combined and set aside.

Distillery 291 Bacon Jam

    Prepare the Bacon Jam

    In a skillet over medium heat, cook the chopped bacon until crispy. Remove excess grease, add diced onions and sauté until onions are translucent. Stir in brown sugar, apple cider vinegar, and black pepper. Simmer until thickened, about 15 minutes. Set aside.

House-Made Sesame Slider Roll

    Make the Dough

    In a large bowl, combine the flour, yeast, sugar, and salt. Gradually add warm water and melted butter. Knead until smooth and elastic, about 10 minutes.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

    Shape the Rolls

    After rising, punch down the dough and divide it into small pieces. Shape each piece into a ball and place on a baking sheet. Brush with melted butter and sprinkle sesame seeds on top.

    Bake the Rolls

    Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes or until golden brown. Let cool before assembling.

Assembly

    Assemble the Sliders

    Cut the sesame slider rolls in half. Spread a generous amount of Pueblo green chili remoulade on the bottom half, place a Wagyu patty with melted cheddar on top, add a spoonful of bacon jam, and top with chicharrónes. Close with the top half of the roll and serve immediately.
