Prepare the Veal Chop
Rub the bone-in veal chop with olive oil, salt, black pepper, and fresh rosemary. Let it marinate for at least 30 minutes at room temperature.

Prepare the Filling
Once the potatoes are cool enough to handle, cut them in half and scoop out the flesh into a large bowl. Add butter, heavy cream, truffle oil, grated Parmesan, salt, and black pepper. Mash until smooth.

Twice Bake the Potatoes
Scoop the filling back into the potato skins. Return to the oven and bake for an additional 15-20 minutes until the tops are golden brown.
Tobacco Onions

Prepare the Onions
Slice the large onions into thin rings. In a bowl, mix together the flour, cornstarch, salt, and black pepper.

Finish the Sauce
Remove from heat and whisk in butter. Season with salt and black pepper to taste.
