Soup Preparation

Sauté the Onions
In a large pot, heat the olive oil over medium heat. Add the chopped shallots, yellow onion, leeks, green onions, and red onion. Sauté until the onions are translucent and softened, about 8-10 minutes.

Add Garlic
Mince the garlic cloves and add them to the pot. Sauté for an additional 2-3 minutes until fragrant.

Add Broth
Pour in the vegetable broth, increase the heat to high, and bring to a boil. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes.

Blend the Soup
Using an immersion blender or a regular blender, blend the soup until smooth. Return it to the pot if using a regular blender.

Add Cream and Season
Stir in the heavy cream and season with salt and black pepper to taste. Heat through on low heat for another 5 minutes.

Prepare Shallots
Thinly slice the shallots and toss them in flour until coated.

Fry the Shallots
In a deep frying pan, heat the vegetable oil over medium-high heat. Once hot, add the floured shallots in small batches. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
