Chocolate Cake

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well mixed.

Incorporate Boiling Water
Stir in the boiling water until the batter is smooth. The batter will be thin.

Bake the Cake
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cake
Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer to a wire rack to cool completely.
Chocolate Crémeux

Melt Chocolate
In a heatproof bowl, combine the chopped dark chocolate and set over a pot of simmering water (double boiler) to melt. Stir until smooth.

Prepare the Cream
In a saucepan, heat the heavy cream until just boiling. In another bowl, whisk together the egg yolks, granulated sugar, and vanilla extract.

Cook the Crémeux
Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove from heat and stir in the melted chocolate until smooth.

Chill the Crémeux
Transfer to a bowl, cover with plastic wrap, and refrigerate until set, about 2 hours.
Dulce Chantilly

Whip the Cream
In a mixing bowl, whip the heavy cream until soft peaks form.

Add Dulce de Leche
Gently fold in the dulce de leche and vanilla extract into the whipped cream until well combined.
Caramelized Crispies

Prepare Caramel
In a saucepan, melt the butter over medium heat and add the granulated sugar. Stir until the sugar dissolves and the mixture turns golden brown.

Combine with Cereal
Remove from heat and quickly fold in the rice cereal until evenly coated with the caramel.

Cool and Crisp
Spread the mixture onto a parchment-lined baking sheet and allow to cool completely. Once cooled, break into pieces.
