Calamari

Method

Prepare the Marinara Sauce

  1. 1

    Cook the Garlic

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

  2. 2

    Add Tomatoes and Seasoning

Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 15 minutes, stirring occasionally.

  3. 3

    Finish the Sauce

Remove the sauce from heat and stir in the chopped fresh basil. Set aside to cool slightly.

Prepare the Calamari

  1. 4

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Mix well.

  2. 5

    Prepare the Egg Wash

In a separate bowl, beat the eggs until well combined.

  3. 6

    Dredge the Calamari

Dip the calamari rings into the egg wash, then coat them in the flour mixture, shaking off any excess.

  4. 7

    Heat the Oil

In a deep pot or fryer, heat the oil to 350°F (175°C).

  5. 8

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Use a slotted spoon to remove them and drain on paper towels.

  6. 9

    Serve

Serve the crispy fried calamari immediately with the marinara sauce on the side for dipping.
