Prepare the Shrimp Mixture

Cook the Shrimp
In a medium bowl, combine the Gulf Coast shrimp, minced ginger, chopped scallions, toasted sesame oil, hot mustard, and sweet chili sauce. Mix well until all ingredients are evenly coated.

Sauté the Shrimp
Heat a skillet over medium-high heat. Add the shrimp mixture and sauté for about 3-4 minutes or until the shrimp turn pink and are cooked through. Remove from heat and set aside.
Prepare the Brioche Toast

Butter the Brioche
Spread the softened unsalted butter evenly on both sides of each brioche slice.

Toast the Bread
In the same skillet used for the shrimp, reduce the heat to medium and toast the brioche slices for about 2-3 minutes per side, or until golden brown and crispy.
Assemble the Toast

Top the Toast
Once the brioche is toasted, top each slice generously with the sautéed shrimp mixture.

Garnish
Sprinkle the toasted sesame seeds and additional sliced scallions over the shrimp toast for garnish.
