Preparation of Branzino

    Clean the Fish

    Rinse the branzino under cold water, removing any scales or entrails. Pat dry with paper towels.

    Marinate the Fish

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Rub this marinade all over the fish, including inside the cavity. Let it marinate for at least 30 minutes.

Grilling the Fish

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Grill the Branzino

    Place the marinated branzino on the grill and cook for about 6-8 minutes on each side until the fish is opaque and flakes easily with a fork.

Preparing Lemon-Caper Butter Sauce

    Melt the Butter

    In a small saucepan, melt the butter over low heat. Do not let it brown.

    Add Capers and Lemon

    Once the butter is melted, stir in the capers, lemon zest, and lemon juice. Cook for an additional 2-3 minutes, stirring occasionally.

    Finish the Sauce

    Remove the sauce from heat and stir in the chopped parsley. Set aside.

Serving

    Plate the Dish

    Place the grilled branzino on a serving platter. Drizzle the lemon-caper butter sauce generously over the fish.

    Garnish and Serve

    Garnish with additional parsley if desired. Serve immediately with lemon wedges on the side.
