Prepare the Pickling Solution
In a medium saucepan, combine the white vinegar, water, sugar, salt, black peppercorns, red pepper flakes, and crushed garlic cloves. Bring to a gentle boil over medium heat, stirring until the sugar and salt are dissolved.

Pickle the Haricot Verts
Once the pickling solution is boiling, add the haricot verts and remove from heat. Let it cool for about 10 minutes, then transfer the beans and pickling liquid to a jar. Refrigerate for at least 2 hours or overnight for best flavor.
Cooking the Shrimp

Prepare the Shrimp
Peel and devein the tiger shrimp, leaving the tails on for presentation. Rinse the shrimp under cold water and pat dry.

Cook the Shrimp
In a large skillet over medium-high heat, add a splash of oil. Once hot, add the shrimp in a single layer. Cook for 2-3 minutes on each side until they are pink and opaque. Remove from heat and squeeze half of the lime juice over the shrimp.

In a serving dish, arrange the cooked shrimp, pickled haricot verts, diced tomatoes, celery, onion, and cilantro. Drizzle with the remaining lime juice.
