French Toast

Prepare the Filling
In a mixing bowl, combine the mascarpone cheese with a pinch of salt. Mix until smooth and set aside.

Prepare Egg Mixture
In another bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until fully combined.

Assemble the French Toast
Take a slice of bread, spread a generous amount of the mascarpone mixture on one side, top with another slice of bread to create a sandwich. Repeat with remaining slices.

Cook the French Toast
In a large skillet, melt 1 tablespoon of butter over medium heat. Dip each sandwich in the egg mixture, allowing it to soak for a few seconds, then place in the skillet. Cook until golden brown on both sides, about 3-4 minutes per side. Repeat with remaining sandwiches, adding more butter as needed.

Prepare the Compote
In a saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Stir occasionally until the berries break down and the mixture thickens, about 10-15 minutes. Remove from heat and set aside.
Citrus Vanilla Sauce

Make the Sauce
In a small saucepan, combine the heavy cream, orange zest, vanilla extract, and granulated sugar. Cook over low heat, stirring frequently until the sugar dissolves and the sauce thickens slightly, about 5-7 minutes. Remove from heat and set aside.
Warm Maple Syrup

In a small saucepan, gently heat the maple syrup over low heat until warmed through, about 5 minutes. Do not boil.
