Cool the Milk
Remove the saucepan from heat and let the milk cool down to around 110°F (43°C). You can use a thermometer to check the temperature.

Add Gelatin
In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it bloom for about 5 minutes. Then, add it to the milk mixture, stirring until dissolved.

Incubate the Yoghurt
Transfer the mixture to a clean container and cover it with a lid or a clean kitchen towel. Place it in a warm area (like an oven with the light on) to incubate for 6-12 hours, depending on how tangy you want your yogurt.

After incubation, check the consistency. If it's thickened to your liking, refrigerate it for at least 4 hours before serving.
