Prepare the Ahi Tuna
Using a sharp knife, slice the Ahi tuna into thin sashimi-style pieces, about 1/4 inch thick. Arrange them on a chilled plate.

Prepare the Vegetables
Wash and dry the gem lettuce leaves, then tear them into bite-sized pieces. Dice the tomato and finely chop the jalapeno (remove seeds if desired for less heat).

Prepare the Orange
Peel the orange and segment it, removing any seeds. Cut the segments into smaller pieces for easier mixing.

Prepare the Preserved Lemon
Rinse the preserved lemon under cold water to remove excess salt. Cut it in half, remove the seeds, and finely chop the flesh.
Assembly

Combine Ingredients
In a mixing bowl, combine the diced tomato, chopped jalapeno, capers, orange pieces, and chopped preserved lemon. Toss gently to mix.

Plate the Crudo
On the plate with the sliced Ahi tuna, arrange the gem lettuce pieces around the tuna. Spoon the tomato and orange mixture over the tuna.

Drizzle a little olive oil over the dish and season with salt and pepper to taste. Serve immediately.
