    Prepare the Bolognese Sauce

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until softened.

    Add Meat

    Add the ground beef and pork to the skillet. Cook, breaking it apart with a spoon, until browned, about 8-10 minutes.

    Add Garlic and Wine

    Stir in the minced garlic and cook for 1 minute. Pour in the red wine, allowing it to simmer until reduced by half.

    Add Tomatoes and Simmer

    Add the crushed tomatoes, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 30 minutes, stirring occasionally.

    Cook the Tagliatelle

    While the sauce is simmering, cook the tagliatelle according to package instructions in a large pot of salted boiling water. Drain and reserve a cup of pasta water.

    Combine Pasta and Sauce

    Add the cooked tagliatelle to the skillet with the Bolognese sauce. Toss to combine, adding reserved pasta water if needed for a smoother consistency.

    Serve hot, garnished with fresh basil leaves and grated Parmigiano Reggiano on top.
