In a large brew kettle, bring 12 cups of water to a temperature of around 165°F (74°C). Add the malted barley, roasted barley, and flaked oats to the water, stirring well to combine. Maintain a temperature of about 150°F (65°C) for 60 minutes to allow the grains to steep.

Preparation of the Mash

After the mash period, remove the grains and bring the liquid (wort) to a boil. Add the bittering hops and boil for 60 minutes. In the last 10 minutes of the boil, add the flavor hops.

Boiling the Wort

Once the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches a temperature of around 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Add the lactose and yeast, stirring gently to combine. Seal the vessel with an airlock and allow it to ferment in a cool, dark place for about 1-2 weeks.

Fermentation

After fermentation is complete, transfer the beer to a keg or bottles. If using a keg, apply nitrogen gas to carbonate. If bottling, add priming sugar to achieve carbonation before sealing.

Carbonation

Chill the keg or bottles and serve cold in a glass, allowing the nitro bubbles to create a creamy head.
