In a large brew kettle, heat 5 gallons of water to approximately 165°F. Add the pale malt, crystal malt, and carapils malt to the kettle and maintain a temperature of around 152°F for 60 minutes.

Mash

After the mash, sparge the grains with hot water to collect the wort. Aim for a total volume of about 6.5 gallons of wort.

Sparge

Bring the wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. Add the Centennial hops at 30 minutes remaining, and the Simcoe hops at 15 minutes remaining.

Boil

After boiling, cool the wort rapidly using a wort chiller or ice bath to around 70°F.

Cool

Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal with an airlock and ferment at around 68°F for 1-2 weeks.

Fermentation

Once fermentation is complete, bottle the beer with priming sugar to carbonate. Allow to carbonate for another 1-2 weeks.
